🛒 Ingredients

5 servings

5
  • ½ cup bulgur wheat
  • 1 carrot, diced and cooked
  • 1 large potato, diced and cooked
  • 1 tomato, diced
  • ½ onion, finely chopped
  • 1 cup broccoli, cooked and chopped
  • Juice of ½ lemon
  • Olive oil, salt, and fresh mint leaves to taste
  • Lettuce leaves for serving

Directions

  1. 1

Soak the bulgur wheat in 1 cup of hot water for 30 minutes, then squeeze out the excess water with your hands.

  2. 2

In a large bowl, combine the bulgur, carrot, potato, tomato, broccoli, and onion. Season with salt, lemon juice, and torn mint leaves.

  3. 3

Arrange lettuce leaves on a serving dish, spoon the salad on top, and drizzle generously with olive oil.

  4. 4

Refrigerate for at least 15 minutes before serving to allow the flavors to meld.

💡 Chef's Tip

For extra depth of flavor, soak the bulgur in warm vegetable broth instead of plain water. Black olives or fresh parsley make excellent additions.
