Salmon Salad with Roasted Leeks and Mushrooms

- 1 large white and light green leek, thinly sliced
- 7 oz button mushrooms, thinly sliced
- 3.5 oz pitted black olives
- 5 oz fresh arugula
- 3.5 oz mixed salad greens
- 1.75 oz fresh spinach
- 4 tbsp extra virgin olive oil
- 3 fresh lemons (juice)
- 4 tsp quality balsamic vinegar
- 1.75 oz pumpkin seeds (pepitas)
- Fine salt and freshly cracked black pepper to taste

Clean the leek thoroughly by cutting it into sections and peeling away the outer layers. Thinly slice and set aside.

Clean the mushrooms with a damp cloth and thinly slice them.

Heat the olive oil in a skillet over medium heat. Add the leek and sauté for 4 minutes, stirring regularly until tender.

Increase the heat to medium-high and add the mushrooms. Sauté for 5-6 minutes, allowing them to caramelize slightly. Season with salt and pepper. Set aside and let cool for 2 minutes.

Wash the salad greens and dry them completely. Arrange them generously in a large salad bowl or directly onto plates.

Add the warm leeks and mushrooms over the salad, then elegantly arrange the diced salmon on top.
