🛒 Ingredients

8 servings

8
  • 2 calabrese sausages, sliced into thick rounds
  • 500 g (about 1 lb) potatoes, cut into quarters
  • 3 garlic cloves, minced
  • 1 medium onion, sliced
  • 1 packet (70 g) tomato paste
  • Fresh parsley and chives to taste
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • Water, enough to cover the potatoes

Directions

  1. 1

Heat the olive oil in a deep skillet or Dutch oven over medium heat. Sauté the onion until softened and translucent, about 3 minutes, then add the garlic and cook for 1 more minute until fragrant.

  2. 2

Add the sausage slices and brown them well on both sides, about 4–5 minutes, to develop a deep flavor.

  3. 3

Stir in the tomato paste, coating the sausage evenly. Add the potato quarters, season with salt and pepper, and scatter in half the parsley.

  4. 4

Pour in enough cold water to just cover the potatoes. Bring to a boil, then reduce the heat, cover, and simmer for about 20 minutes or until the potatoes are fork-tender.

  5. 5

Taste and adjust seasoning. Serve hot, garnished with fresh parsley and chives. Optionally, thicken the leftover broth into a gravy by whisking in a teaspoon of cornstarch.

💡 Chef's Tip

Use smoked calabrese sausage for a deeper, smokier flavor. Add a diced red bell pepper with the onion for extra sweetness and color. Leftovers reheat beautifully and taste even better the next day.
