🛒 Ingredients

4 servings

4
  • 500 g Tuscan-style sausage (or herb pork sausage)
  • 4 tablespoons extra virgin olive oil
  • 2 medium onions, sliced into rings
  • 1 liter water (for par-boiling the sausages)
  • Dried parsley or dried basil, to taste
  • Salt and freshly ground black pepper

Directions

  1. 1

Bring the water to a boil, add the sausages and cook for 5 minutes after boiling resumes. Drain and let cool slightly.

  2. 2

Slice the sausages into medium-thick rounds, about 1.5 cm each.

  3. 3

Heat the olive oil in a large skillet over medium heat and sauté the onions until deeply golden and caramelized. Add 2 tablespoons of water if the pan starts to stick.

  4. 4

Add the sausage slices and stir to combine with the onions. Cook over medium-high heat, stirring occasionally, until the sausage is nicely browned.

  5. 5

Turn off the heat, sprinkle with dried parsley or basil, cover the pan and let rest for 2–3 minutes. Serve hot.

💡 Chef's Tip

A splash of white wine added after the onions caramelize adds wonderful depth. You can also finish with fresh herbs for extra brightness.
