🛒 Ingredients

4 servings

4
  • 500 g (1 lb) pork sausages (Toulouse-style or Italian)
  • 500 g (1 lb) baby potatoes
  • 1 large red bell pepper, sliced
  • 2 garlic cloves, unpeeled
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper
  • Fresh basil leaves, to serve

Directions

  1. 1

Preheat the oven to 200 °C / 400 °F (fan). Wash the baby potatoes and parboil them in salted boiling water for 5 minutes. Drain and set aside.

  2. 2

Drizzle olive oil into a large roasting tin. Add the sausages, parboiled potatoes, sliced bell pepper and garlic cloves. Sprinkle with smoked paprika, season generously with salt and pepper, and toss everything together to coat.

  3. 3

Roast for 30–35 minutes, turning halfway through, until the sausages are deeply golden and the potatoes are crispy on the outside and fluffy inside.

  4. 4

Remove from the oven, scatter torn fresh basil leaves over the top and serve straight from the tin.

💡 Chef's Tip

Throw in a handful of cherry tomatoes for extra juiciness. Leftovers reheat beautifully in a hot skillet with a splash of olive oil.
