🛒 Ingredients

4 servings

4
  • 500 g pork sausages (Toulouse-style or any good-quality link sausage)
  • 500 g waxy potatoes, peeled and cut into wedges
  • 3 garlic cloves, crushed
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and freshly ground black pepper

Directions

  1. 1

Preheat the oven to 200 °C (fan 180 °C). Cut the potatoes into even wedges about 3 cm thick.

  2. 2

Arrange the sausages in a large roasting dish. Tuck the potato wedges around and between them. Scatter over the crushed garlic.

  3. 3

Drizzle with olive oil, sprinkle with thyme and rosemary, and season well with salt and pepper.

  4. 4

Cover tightly with foil and roast for 30 minutes.

  5. 5

Remove the foil and continue roasting for a further 10–15 minutes until the sausages are browned and the potatoes are golden at the edges.

  6. 6

Serve straight from the dish with a simple green salad.

💡 Chef's Tip

Use waxy potatoes such as Charlotte or Yukon Gold — they hold their shape and get wonderfully crispy on the outside. For extra colour, switch the oven to grill/broil for the last 3 minutes.
