Directions
- 1
Slice the beef into medium strips. Season with salt, pepper and half of the soy sauce. Marinate in the refrigerator for at least 1 hour.
- 2
Heat the oil in a large skillet or wok over high heat. Sear the beef strips until well browned on all sides.
- 3
Add the water (or broth), remaining soy sauce and minced ginger. Bring to a boil, then adjust salt to taste.
- 4
Reduce heat to low and simmer for 30 minutes, until the beef is tender and the broth is richly flavored.
- 5
Cook the soba noodles according to package instructions. Drain and set aside.
- 6
In a small pan, melt the butter over medium heat and prepare soft, creamy scrambled eggs.
- 7
Assemble in deep individual bowls: add the noodles, ladle hot broth over them, top with beef strips and scrambled eggs, finish with sliced green onions.
💡 Chef's Tip
Add a few drops of toasted sesame oil just before serving for extra depth of flavor. For a more elegant presentation, swap scrambled eggs for a soft poached egg.
