🛒 Ingredients

6 servings

6
  • 8 large steaks (sirloin or rump)
  • Salt and freshly ground black pepper
  • 2 garlic cloves, minced
  • 10 eggs
  • Sunflower oil for frying
  • 4 medium potatoes (Maris Piper or Russet)

Directions

  1. 1

Season the steaks with salt, minced garlic, and black pepper. Let them rest at room temperature for 30 minutes to absorb the flavors.

  2. 2

Peel the potatoes and cut into even strips. Fry in hot oil until golden and crispy. Drain on paper towels and season with salt.

  3. 3

Heat a pan with a drizzle of oil over high heat. Cook the steaks one at a time — this prevents them from steaming and ensures a proper sear. Cook 2–3 minutes per side to your liking.

  4. 4

In the same pan or a separate one, fry the eggs over medium heat without breaking the yolks until the whites are fully set and the yolks still runny.

  5. 5

Place each steak on a warm plate, top with a fried egg, and serve alongside the crispy fries immediately.

💡 Chef's Tip

Take the steaks out of the fridge 20 minutes before cooking for an even sear. Cover the pan for the last 30 seconds of egg cooking if you prefer a lightly set yolk.
