Directions
- 1
Place the flour in a large bowl, add the warm water and knead with your hands until a smooth, even dough forms.
- 2
Cover the bowl with a clean kitchen towel and let the dough rest for 5 to 10 minutes.
- 3
Divide the dough into small balls roughly the size of a walnut.
- 4
Place each ball between two sheets of plastic wrap and flatten using a tortilla press or rolling pin.
- 5
Carefully peel off the plastic and cook each tortilla on a hot cast-iron skillet for 20 seconds per side, until lightly golden-speckled.
- 6
Dice the tomatoes into small cubes. Halve the chili, discard the seeds and white membranes, and mince finely.
- 7
Mash the avocado with a fork, then stir in the tomatoes, chili, cilantro, onion, lime juice, and olive oil. Season with salt.
- 8
Spoon guacamole and chilli onto each tortilla, fold, and serve immediately.
💡 Chef's Tip
Stack cooked tortillas under a damp kitchen towel to keep them warm and pliable. Make the guacamole just before serving and squeeze a little extra lime on top to prevent browning.
