🛒 Ingredients

10 servings

10
  • 3 cups all-purpose flour
  • 1 cup vegetable oil
  • 2 cups whole milk
  • 3 eggs
  • 2 chicken bouillon cubes
  • 2 tablespoons baking powder
  • 2 tablespoons grated parmesan
  • 250 g (9 oz) ground beef
  • 3 garlic cloves, minced
  • 1 medium onion, diced
  • 1 tomato, diced
  • ½ red bell pepper, diced
  • ½ can sweet corn, drained
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon sweet paprika
  • Black pepper to taste
  • Oil to grease the pan

Directions

  1. 1

Preheat the oven to 180 °C (350 °F). In a large bowl, whisk together flour, eggs, oil, milk and crumbled bouillon cubes until you have a smooth, lump-free batter.

  2. 2

Stir in the baking powder and grated parmesan, mixing gently. Set the batter aside.

  3. 3

Heat a drizzle of oil in a skillet over medium heat. Sauté garlic and onion until fragrant, add ground beef and cook until browned. Add tomato and bell pepper, season with cumin, coriander, paprika and black pepper, and cook 5 more minutes. Stir in drained corn and remove from heat.

  4. 4

Grease a 30 × 20 cm (12 × 8 in) baking pan. Pour in half the batter, spread the meat filling evenly on top, then cover with the remaining batter.

  5. 5

Bake 35–40 minutes until the top is golden brown and a toothpick inserted in the center comes out clean. Rest 10 minutes before slicing and serving.

💡 Chef's Tip

For an even smoother batter, blend all liquid ingredients together before folding in the flour. Leftovers keep well in the fridge for up to 3 days and reheat beautifully in the oven or microwave.
