🛒 Ingredients

4 servings

4
  • 500 g (1 lb) pork ribs, trimmed
  • ½ cup olive oil
  • Salt, to taste
  • ½ tsp ground black pepper
  • ½ cup fresh lemon juice
  • 1 tsp lemon zest
  • 1½ tbsp Worcestershire sauce
  • 1 clove garlic, crushed
  • 2 tbsp ketchup
  • ½ cup white vinegar
  • ½ cup vegetable oil
  • ¼ cup (60 g) unsalted butter
  • Salt and black pepper, to taste

Directions

  1. 1

Preheat your oven to 180 °C (350 °F). Rinse and pat the pork ribs dry with paper towels.

  2. 2

Season the ribs generously on all sides with salt and ground black pepper.

  3. 3

Wrap tightly in a double layer of aluminum foil and place in a baking dish.

  4. 4

Bake for 2 hours at medium heat until the meat becomes tender and falls from the bone.

  5. 5

While the ribs cook, make the glaze: melt the butter with the vegetable oil in a small saucepan over low heat.

  6. 6

Stir in the vinegar, ketchup, crushed garlic, Worcestershire sauce, lemon juice, and lemon zest. Season with salt and pepper.

  7. 7

Bring to a gentle boil, stirring constantly, then remove from heat and rest for 5 minutes.

  8. 8

Remove the ribs from the oven, unwrap, and brush generously with the glaze.

  9. 9

Return to the oven, uncovered, for 30 more minutes until golden and caramelized.

  10. 10

Serve immediately — the ribs should melt in your mouth.

💡 Chef's Tip

For extra caramelization, finish under the broiler for 3–5 minutes at the end. Serve alongside mashed potatoes or coleslaw for a complete meal.
