🛒 Ingredients

20 servings

20
  • 1 kg (2.2 lb) ground beef
  • 1 kg (2.2 lb) cooked cassava (yuca)
  • 2 medium onions, diced
  • 6 garlic cloves, minced
  • 2 chicken bouillon cubes
  • 1 mild chili pepper, finely chopped
  • 1 bunch fresh parsley and chives
  • Salt and black pepper to taste
  • 1 liter (4 cups) hot water
  • Grated cheese for serving
  • Toasts or crackers for serving

Directions

  1. 1

Season the ground beef with minced garlic, diced onion, and chili pepper. Let sit for 10 minutes.

  2. 2

In a large pot, cook the ground beef over medium-high heat until well browned, breaking it apart with a wooden spoon.

  3. 3

Blend the cooked cassava with a little of its cooking water until you get a smooth, creamy purée.

  4. 4

Add the cassava cream to the pot with the beef, crumble in the bouillon cubes, and pour in 1 liter of hot water.

  5. 5

Season with salt and pepper, stir well, and bring to a boil.

  6. 6

Reduce heat and simmer for 20 minutes, stirring occasionally, until the soup thickens to a velvety consistency.

  7. 7

Remove from heat and stir in freshly chopped parsley and chives. Serve hot topped with grated cheese and toast.

💡 Chef's Tip

For an even smoother texture, strain the cassava purée through a fine sieve before adding it to the pot. Swap chicken bouillon for beef bouillon for a deeper, richer flavor.
