- 4 cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 red bell pepper, diced
- 3.5 oz Kalamata black olives
- 7 oz feta cheese, cubed
- 1/2 red onion, thinly sliced
- 1 cup fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp white vinegar
- Salt and black pepper to taste
- Dried oregano (optional)

Wash and prepare all your vegetables. Cut the cherry tomatoes in half, and dice the cucumber and red bell pepper into uniform pieces.

Thinly slice the red onion and pour the vinegar over it. Let it sit for 2-3 minutes to soften slightly.
