Directions

  1. 1

Cook the brown rice according to package instructions (approximately 30-40 minutes).

  2. 2

Peel and cut the sweet potatoes into uniform cubes; roast in the oven at 392°F with olive oil, salt, and pepper for 25-30 minutes.

  3. 3

Prepare the sauce: cut the passion fruits, scoop out the seeds and pulp, and mix with the lemon juice, honey, salt, and pepper.

  4. 4

Place the vegetables on a baking sheet with a little olive oil, salt, and pepper; roast in the oven at 392°F for 20 minutes.

  5. 5

Season the salmon fillets with salt and pepper. Pan-sear in olive oil over medium heat for 4-5 minutes per side.

  6. 6

Pour the passion fruit sauce over the salmon during the last minute of cooking.

  7. 7

Assemble the plate: serve the rice, sweet potato mash, salmon with its sauce, and roasted vegetables. Garnish with lemon zest and fresh herbs.

💡 Chef's Tip

Passion fruit can be replaced with mango for a tropical variation. Prepare the sauce in advance to save time. Ensure the salmon is fresh and cooked through without becoming too dry.
