Passion Fruit Glazed Salmon

- 4 fresh salmon fillets (approx. 5 oz each)
- 3 passion fruits
- 2 lemons (juice and zest)
- 1 cup brown rice
- 2 medium sweet potatoes
- 10.5 oz mixed vegetables (broccoli, carrot, bell pepper)
- 2 tbsp olive oil
- Salt and pepper
- 1 tsp honey
- Fresh herbs (dill or parsley)

Cook the brown rice according to package instructions (approximately 30-40 minutes).

Peel and cut the sweet potatoes into uniform cubes; roast in the oven at 392°F with olive oil, salt, and pepper for 25-30 minutes.

Prepare the sauce: cut the passion fruits, scoop out the seeds and pulp, and mix with the lemon juice, honey, salt, and pepper.

Place the vegetables on a baking sheet with a little olive oil, salt, and pepper; roast in the oven at 392°F for 20 minutes.

Season the salmon fillets with salt and pepper. Pan-sear in olive oil over medium heat for 4-5 minutes per side.

Pour the passion fruit sauce over the salmon during the last minute of cooking.
